OK, I got several requests for my (Jackie's) corn dip recipe. If you've got any good ones, post them up, too. CORN DIP 3 cans mexicorn (We use the Green Giant brand) 1 cup lite sour cream 1 cup lite mayonnaise (do not use miracle whip) 1 small (4oz I believe) can green chiles, chopped (mild) - use Ortega brand 2/3 small (4oz I believe) can jalapenos, chopped (add less if you want not so spicy) - use Ortega brand 1 cup finely shredded mild cheddar or mexican cheese 1 teaspoon sugar (or splenda) Add "Tony Chachere's Creole Seasoning" to taste (add small amount at a time)...this can be found at Walmart in the spice section - green container with red writing and a dude in a chef hat on it. Mix all ingredients together. Add Tony's and taste...if you want more spice add more Tony's or more jalapenos. Refrigerate overnight. Serve cold with corn or tortilla chips. We like the scoops style chips best!

100 + pounds of beef trim out, marinate then slow cook for at least 8 hours. 30 pounds of potatoes, peel, chop, cook. 18 eggs boiled peeled and chopped, some celery, some pickles, some mayo... mix and chill! 5 gallons of beans cooked, mix in some ground beef and spices. re-heat beef and mix in BBQ sauce. Invite some friends over. Drink beers!

Root beer float: One shot glass per person three parts Phillips 100 proof root beer one part Absolut 80 proof Vanilla Vodka Sip it or slam it, either way it's tasty!!!! Puerto Rican Hooker: Two shot glasses per person One shot glass to the rim with Jose Cuervo One shot glass half full with Vlasic Sweet Pickle juice Slam the Teqiula follow immediately with pickle juice!!!! Damn hooker will kick your a$$ if you ain't carefull...... Enjoy liberally........ But don't mix these two together.......

This one I call the Cuban Pimp.... Don't ask me why 'cause I don't know, that's just what I call it..... One full size super cold Corona Extra Small lime wedge Fill to the top of bottle with Bacardi Limon Put your thumb over opening turn upside down to let it mix a little then enjoy!!!!!!

Xmas morning. I read about Baking Bacon, so I tried it today was great. Anyone else ever do it. Lay bacon on foil in cookie sheet preheat oven to 400 bake for 12-15 minutes.
