Ted Y Posted June 4, 2010 Share Posted June 4, 2010 OK, I got several requests for my (Jackie's) corn dip recipe. If you've got any good ones, post them up, too. CORN DIP 3 cans mexicorn (We use the Green Giant brand) 1 cup lite sour cream 1 cup lite mayonnaise (do not use miracle whip) 1 small (4oz I believe) can green chiles, chopped (mild) - use Ortega brand 2/3 small (4oz I believe) can jalapenos, chopped (add less if you want not so spicy) - use Ortega brand 1 cup finely shredded mild cheddar or mexican cheese 1 teaspoon sugar (or splenda) Add "Tony Chachere's Creole Seasoning" to taste (add small amount at a time)...this can be found at Walmart in the spice section - green container with red writing and a dude in a chef hat on it. Mix all ingredients together. Add Tony's and taste...if you want more spice add more Tony's or more jalapenos. Refrigerate overnight. Serve cold with corn or tortilla chips. Desertdawg Posted June 4, 2010 Share Posted June 4, 2010 100 + pounds of beef trim out, marinate then slow cook for at least 8 hours. 30 pounds of potatoes, peel, chop, cook. 18 eggs boiled peeled and chopped, some celery, some pickles, some mayo... mix and chill! 5 gallons of beans cooked, mix in some ground beef and spices. re-heat beef and mix in BBQ sauce. One full size super cold Corona Extra Small lime wedge Fill to the top of bottle with Bacardi Limon Put your thumb over opening turn upside down to let it mix a little then enjoy!!!!!!
